One of the people I love most in my life is my grandma. There are millions of reasons why I absolutely adore this woman. People say I am the spitting image of her. You should have been able to see her when she was my age, a gorgeous full figure, woman, always laughing. Although she got widowed very soon after she got married to my grandfather, with a young child to take care of (my mother) she managed to come along all difficulties. I admire her for her strength and courage and most of all I admire her for her cooking. She is a hell of a cook, even though her cooking is mostly based on tradition from the place she comes from. And that would be Trikala at Thessaly.
In Thessaly the most common food is pies, and that's because during war period the only thing that people had access to was flour. And not any flour, corn flour. My grandma makes hell of spinach pies, cheese pies, meat pieces and zucchini pies. She makes her own dough and then with a really thin plaster she creates the layers for the pies (I really can't explain any better than this...). My all time favorite pie is called bobota or batzina, which as I found on the dictionary it's called hoecake in engish. It's actually a dough made out of corn flour, olive oil and water for the base, all kinds of herbs with feta cheese for the filling and a couple of handfuls of corn flour just spread around for the topping.
Today, I got a chance to see how my most precious pie is made. Went up to my grandmother's house and with her watching over I made my first ever oven dish of bobota!
